31 Days of Comfort Food: Day 13, Stuffed Baked Potatoes

Today's dish is a great addition to any meal, but I love it for barbecues and potlucks. The prep can be done ahead of time, making it easy to just heat and enjoy.
Stuffed Baked Potatoes
5 medium baking potatoes
1/4 cup butter, softened
2 cups shredded cheddar cheese
3/4 cup sour cream
1 envelope ranch dressing mix
1 T. snipped chives
1 clove garlic, minced
Crumbled cooked bacon and 
chopped green onions
Bake potatoes at 400 for 1 hour or till tender. Reduce heat to 375. Cut each potato in half lengthwise; scoop out the pulp, leaving a thin shell. In a large mixing bowl, beat the pulp with the butter. Stir in 1 cup of cheese, sour cream, ranch mix, chives, and garlic. Spoon into shells. Sprinkle with remaining cheese. 
Place on a baking sheet. Bake for 15-20 minutes or till heated through. Top with bacon and green onions.
